Hi Gwen! Gluten contains 2 protiens, Glutenin and Galidin, Galidin has been found as the main cause of reactions to celiacs disease. This is because the amino acids in the galidin are highly concentrated, simillar to harmful bacteria. This causes the body to react simmilarly to a allergy, or sickness.
