Hi AlyKat, although the protein information listed on the nutritional panel and the protein percentage are related to each other, it's difficult to derive the protein percentage from the nutritional information. This is because the grams expressed on the nutritional panel are rounded to the nearest gram (as required by the FDA). For example, the actual protein content for our Unbleached All-Purpose Flour is 3.51g and for the Bread flour it's 3.81g, but both are rounded up to 4 grams. 

A percentage is a part divided by a whole. The part of the flour's weight that's protein is divided by the whole weight of the serving (usually 30 grams). The result is the percentage of protein in the flour.

Our Unbleached Bread Flour has 12.7% protein, which equals 3.81g protein/30g flour.  Our Unbleached All-Purpose Flour has 11.7% protein, which equals 3.51g of protein/30g flour.  Mathematically both 3.81 and 3.51 round up to 4g, which is what you see on the label.

Of course, this makes it hard to know what the original protein level is once it gets rounded. For that, it’s best to check elsewhere on the bag to see if it’s listed. We print the protein percentage of our flours right on the front panel so customers can choose the best flour for their needs.
