What is the formula used for determining the protein percentage for any bag or type of flour? The nutritional information for both the KA AP Flour and the KA Bread Flour both show 4g of protein per 30g of flour. Yet, the bread flour is listed to be 1% higher in protein. I’d really love to learn the math and the why. Thank you!
