Hi. Thank you for the helpful information! I am wondering if you have thoughts on high hydration in enriched sourdough recipes... particularly a sandwich bread... I'm wondering if I'm doing too high of hydration and if eggs, butter, etc. clash with a wetter dough. Thanks!
