This article came just in time. Been having a tiny bit of disappointment with my high hydration loaves. They taste awesome and are toothy just the way I like, but quite often they spread out in the oven instead of rise up. Was considering just reducing the water. Instead I will try Maura Brickman's recipe with a med high hydration of 80. Love KABF. Keep the recipes coming.
