Hi Melissa, you always want to be sure to cover the bowl well with plastic wrap or a lid when you store the dough in the refrigerator, which should prevent the surface of the dough from drying out. However, if you've already developed some crust on your dough, I would recommend gently peeling it off and discarding it so that you can work with the softer dough beneath.
