Hi H, this isn't an area of air fryer baking w haven't explored as yet. Freezing dough can be tricky because the freezer almost always does some damage to yeast cells. When freezing rolls, we recommend this method, which involves shaping and freezing the rolls right after mixing the dough, however I don't think this would work well with an air fryer, since a long rise time at room temperature is required before baking.
