Sorry for any confusion with the measurements. We use equal parts by weight of flour, water and starter as a typically feeding. If you're measuring by volume it's equal measures of starter and water (1/2 cup) and double that amount of flour (1 scant cup).
For the denser loaves, do try a little extra water, and a slightly stickier dough. Dry dough has a harder time expanding, so slightly wetter dough can give you a better rise.
