What I have found works best for me in Michigan - is paper AND plastic. Sourdough loaves, bagels from Panera, homemade cookies, all of these stay fresher for me if the are in a paper bag and then in a plastic bag. wrapped this way on my counter I find that in the cool months I will be able to keep my sourdough for a full week, without the paper I find the bread gets moldy pretty quick and without the plastic it gets hard and stale within a day.
