Hi John, It sure is tempting to try isn't it? Although the starter rises quite vigorously in that first day, the starter will not have quite enough power to leaven the dough all the way through the proofing process and in the oven so it is best to wait until the starter has stabilized in day 5 or 6 as you have been doing.
