Hi Joanne, the type of pizza oven that has the fire on the cooking surface is more traditional and will therefore make it easier to replicate the traditional charred edges and smoky flavor we've come to expect from wood-fired pizzas. That being said, there are pros and cons for every type of pizza oven, and exploring the resources recommended here may give you a better sense of the pizza oven that will work best for you and your individual needs.
