Hi Jami, you could certainly use another fruit and make sure to check out pie thickening guide for specific amounts of thickener to the fruit you select. You will also want to consider the firmness of the fruit in question as cherries are a bit more firm than blueberries. In this case, slicing and pitting the fresh cherries prior to mixing with the gently cooked filling will contribute to a more manageable and homogenous mouthfeel.
