Hi Dawn, the Birkett Mills Organic Buckwheat Flour that we sell is hulled before milling, but the packaging says, "Our USDA Certified Organic Pocono Buckwheat Flour was milled from 100% whole grain, stone-ground buckwheat." I think because buckwheat is not technically a grain, the answer is a bit more complex. As far as fiber goes, this flour has 1g of fiber per 30g serving.
