I grew up in northern Maine along the Canadian border in the St. John River valley. The people in the "Valley" are of Acadian heritage both on the American and Canadian sides of the river. We are the boring, hard-working cousins of the fun loving, talented Cajuns in Louisiana. Winters in northern Maine are harsh and long and the growing season is short. Buckwheat was grown because it is hardy, strong and nutritious. It is still grown in the Valley. Our buckwheat pancake/crepe recipe is ubiquitous in the area. A ployes mix is available in Maine. Brand name is Bouchard Family Farms. There is a recipe for a sourdough version called ployes au levin. (By the way; ployes rhymes with boy. You don't pronounced the s.).
