Hello. I have been making Oats & Linseed GF bread using a mix of Oat flour - about 40% and a blended GF All Purpose flour but want to change this to my own mix. I was thinking Buckwheat flour and maybe Brown Rice and/or Potato starch. Would that work? And in what proportion? Or is there another selection/mix you would use if making this kind of bread. Would be very grateful of any advice
