We tried a few vegan butters before finding what we think is the best tasting one: Wegman's buttery spread sticks. I have made good cookies and biscuits with that butter, but have not tried it in cakes. Instead, for cake I make the King Arthur Cake Pan Cake, which is delicious, and does not require butter.
