I have found that the country crock vegan butter made with avocado oil is been wonderful in baking both in taste and form. I will say it is softer however. So if you are looking for a buttercream to hold in the heat you may want to choose something else or fortify it. Instead of buttercream (for my very lactose intolerant daughter) I usually make a chocolate ganache from coconut milk and chocolate. Goes very well with a vegan chocolate cake.
