I have family members who are lactose intolerant so I have been learning how to cook for them. This article was very helpful! I would like to see something similar comparing cows milk to soy, almond, or oat. I baked a cake with soy and it didn't rise well. I found that ganache made with coconut cream was just as good as whipping cream.
