Thanks for this! I know a fair number of vegans or dairy-free people so I'm always looking for ways to bake for them. My actual preference is to use recipes that are vegan as written (e.g. I make my pie crusts with vegetable shortening) but I also love blog posts like this with real insights on how various substitutions will perform for those instances where I can't find a vegan recipe from a source I trust.
