I have a son who is allergic to dairy, so I often use vegan butter when baking. I have been experimenting for years. I have found that making blends with the vegan butter works best. With buttercream I use half shortening/half earth balance. When making cookies/cakes, I used half vegetable oil/half vegan butter. It seems to help with the taste for me! Vegan butter hasn’t been my favorite flavor, but mixing it with other oils/fats makes it taste delicious to me.
