I'd love you to add some whole grain flours in here; I've been playing with substituing in 3/4 cup of a combo of millet & quinoa flour. ( I just pulverize the grains in my vitamix blender). I enjoy the taste more- its more like a real bread, esp with a sourdough recipe, but I fear I loose some height.
