Once a month, I bake 5-6 loaves of various breads, plus burger buns, yeast rolls, etc. There are only two of us, so I freeze it all and it tastes great!!
I section them in half-loaves, pairs of buns, and four rolls in snug plastic wrap, then fill up bread bags. I store most in a plastic tote with lid in a small trunk freezer in the garage, and the rest in the kitchen freezer. Then I thaw on the countertop still wrapped in plastic, though for buns I just slice them while frozen and put them through one cycle for dark toast - perfect for burgers!
Honestly, the only challenge is organizing all the recipes so nothing under/over proofs since I only have one oven! lol I'm currently experimenting with making par-baked biscuits for the freezer.
