I buy yeast in bulk, so I've been baking more bread lately. I freeze all bread I make and take it out as needed; most defrost quickly. Home made pita bread is much better than what is available in stores; after frozen, to serve it I heat my toaster oven then turn off the oven and put in the frozen pita. The heat from the oven defrosts it and heats it perfectly.
