Hi there, Donald! For best results, we'd recommend making both recipes start to finish the day before. Both recipes make for soft rolls that keep well so if you were to bake them the night before, the next day they'll still be delightful! The Amish Dinner Rolls have a very short rise so we worry that they'll over-proof. If you do give it a try, you'd want to do the overnight rise during the first rise time. Keep in mind that since the dough will be cold, the second rise will take a bit longer. We hope this can help and happy baking!
