This was a very interesting blog. I bake all my bread and use only sourdough. I must confess that I never paid much attention to the measurement of salt in bread, I merely measure it in the palm of my (left) hand. So your recommendation concerning salt in yeast bread definitely caught my eye. Is the issue the same for sourdough?
