I followed the recipe accordingly, weighing all my ingredients. My loaf came out a bit course and crumbly when sliced. I used unfed discard straight from the frig. I got a decent rise on the loaf, what I would consider normal. I reduced the amount of yeast used as recommended. Should I reduce it even more? The bread tastes great!
