Excited to make this and have questions:

1) I plan to use the BP as called for in recipe, but still want to add baking soda to tame the tangy flavor of unfed SD. How much do you suggest?

2) I’d like to substitute some of the AP flour with White Whole Wheat flour to add a little heartier-wheat-nuttiness, but without overhauling the recipe or messing up end result. How much do you suggest?
