Hi Rachel! You can make delicious gluten free pull apart rolls, but it really depends on what type of gluten free recipe (and the type of gluten free flour) you are working with. For example, if you use our Gluten Free Dinner Roll recipe, which uses our Gluten Free All Purpose Flour, you can scoop the dough into eight portions into an 8" round cake pan (with seven pieces around the edge and one in the center). Gently flatten them, let them rise, and then bake! You could also follow our recipe for Buttery Gluten Free Rolls, which uses our Gluten Free Bread Flour. Those are baked in a square pan and have a beautiful, pull apart texture when served.
