Hi Sharon, if you've fully prebaked the crust but aren't planning to fill it right away, you could allow it to cool and then wrap it in plastic wrap or a bread bag and leave it at room temperature. The crust shouldn't need refrigeration at that point, and might dry out in the fridge. Even if you only partially baked the crust, I think it should be fine at room temperature; just be sure to wrap it well so it doesn't dry out. Of course, if you're filling the pie shell with a filling that needs to be refrigerated (like our Chocolate Cream Pie), then by all means store the assembled pie in the refrigerator.
