What a great post! The photography, the story, the recipe and tips... A+. I hope we get to see more of Frankie Gaw here at King Arthur, and I will be checking out his blog as well. As a gluten free household I unfortunately can't make this recipe as written, but I've got a copy of "The Gluten-Free Asian Kitchen" by Laura Russell that has a recipe for steamed dumpling dough. If I give it a go I'll try to remember to report back!
