I am so glad to see a recipe for a bread from my childhood that brings back so many happy memories. My father and I would go to Ozuna bakery in the Bay area every week to buy them when I was a little girl. I used to love the pink ones, (and still do). I traveled to Mexico and tried the conchas there, and they are indeed better. I am glad to see bakers with knowledge of authentic Mexican baking traditions and recipes applying their skills to make a more authentic experience for us in the states.
For the record, I wish we were not spending so much time debating the opinions of Ms. Comacho, as she is simply relating her OWN experiences as she sees them. It is not our job to question how she feels about her journey to becoming a baker while here in the states. Further, King Arthur is a private company, entitled to follow whatever vision fits their mission and business model. If they want to promote equality and inclusiveness as part of their culture, then they are entitled to do so.
