Thanks for reading Mariela's article, Cesar, and for reaching out with your thoughts! While conchas have been around for a long time and haven't gone away in Latin America, the conchas that have made their way into the U.S. aren't quite the same in Mariela's experience. Her goal is to revive the conchas in the United States, focusing on using authentic and whole ingredients and traditional processes for making this delightful bread so that they better reflect those that are made in Latin America.
