Hi Jen, without seeing the baguettes, it's difficult to determine what exactly is causing the issue. When scoring your baguette, your slashes should be confined to the middle third of the top of the loaf. Overlap them about 30% and make sure to create the score along the long axis, not across the width. That should help with the pea-pod shape.
