Hello I'm a young baker trying to pursue dreams and start a at home bakery, I struggle with finding a not supper sweet icing but most I find have a very buttery taste that doesn't go well with most cake flavors, I want one I can have a stick with so I'm not swapping recipes constantly, I need one I can use by itself and as base for other flavors I've searched everywhere and I can't find one I'm wanting to try Swiss but idk if can use it as a base for other flavors? any tips?? I'm also wanting to get into sour dough and don't know what I need and where to start any tips help thank you (sorry for the long message just reaching out for much needing advice:))
