You need a couple of Lefse Turing sticks, sorry not sold here, but Bethany Households, who sell the Lefse griddles, has everything you need included rolling pins and covers for Lefse. Also put them between dishcloths and a heavy thick cloth or even a blanket before putting into plastic bags to keep in the freezer or fridge. I prefer half Yukon gold and half russets to 1/2 flour, this flour, unbleached artisans is the same as they use in Norway.
Last there are as many types of Lefse as people in Norway. Some even without flour, that’s really an American thing! Try Hardanger or Nordeland!!! Very sweet and thick. Yummy
