I was taught that only russet potatoes would work with lefse, so, interestingly, you suggest white potatoes or other boiling potatoes. I was doing a quick search because I mistakenly bought white potatoes (I am still doing online orders due to COVID-19). So, I am going to try white potatoes for the first time. I really hope it works. Yes, I am skeptical, sorry! We've been making lefse for nearly 20 years. My husband's grandma used to make it on Christmas mornings. We started making it over Christmas but found it to be too much for us. Then we started doing it whenever we got to it - either in the spring or the fall. Now, we make it in the fall. My husband and I used to make it late at night when the children were in bed. Then as they got older, they became part of the process. They love it and have fond memories of our "lefse parties."
