What a lovely coincidence to read this. Yesterday I made my Grandmother MacIntyre’s recipe for Scottish “Potato Scones” which are very similar to this and made on a griddle.
I gave some to a Mexican gentleman who was doing some work for us and he told me his Mexican mother used to make something very similar when he was a schoolboy.
Must be a universal way to use up potatoes in thrifty households. “Waste not- want not” as Granny would say.
