Thank you for highlighting this delightful dish! I grew up in Wisconsin making lefse with my mom and neighbor. We continue to make it eachbyesr for Thanksgiving and Christmas. We use a thin, long, wooden stick that resembles a handled blade to pick the lefse up from our rolling area to the griddle, flipping in the griddle, and back off again.
