Oh my gosh, talk about memories being tagged to food...! I have always had a special place in my heart for Lefse! As a kid we would visit my relatives up in North Dakota (30 miles south of the Canadian border) and there being a lot of Norwegians up there, Lefse was very commonly made. Yes, the butter and cinnamon sugar was the version I remember too, and loved. It was such an odd little snack that I only had while up in ND; I remember when I found out it was made with potatoes...potatoes...?! I had no idea. Lefse for me is uniquely a North Dakota memory but I have never tried making them. Now I have a recipe and I’ll be sure to try making them. Maybe it will help me hold out a little longer until this pandemic runs its course and we can travel again to North Dakota for their homemade Lefse!! Thank you so much for posting this very unique recipe. I feel like you posted it just for me! 😊
