Hey folks. Loved the flavor and texture of these, but mine were a real mess. Followed all the steps carefully, weighed the ingredients, chilled the dough, measured as I rolled it out, cut as directed (except in squares, not diamonds). Then the odd things started happening: First, the dough swelled up and threatened to overrun the pan on first baking. The initial cuts almost entirely disappeared. I re-cut within about 5 minutes after that, following what seemed to be the lines. Waited a little longer, separated them and put them on 2 cookie sheets, and baked as directed. The finished cookies are delicious but SO messy and ratty-looking, and also seem much thicker than those in your photos. What might I have done wrong? I've been cooking for 60 years, and your recipes generally come out just as described.... I'm confused (but still eating the cookies). Thanks!
