Heather, though we have not tried it with this recipe, you may want to roll out the dough into a cylinder, refrigerate it, then thinly slice the dough into disks and then bake. Pack them in close to each other so the edges don't dry out. This may require some experimentation but at least you won't have to use a rolling pin. Happy baking!
