I love rye in cookies! I look forward to trying these. Would it be possible to roll portions into balls and flatten them with the bottom of a glass, rather than rolling out a disk and cutting/recutting? I am not so interested in the round shape as I am about not having to roll dough (not my strong suit). Would the extra space around the cookies in round 1 lead to burning or other undesirable effects that are avoided when the cookies are tightly together in the original?
