I pinched for 50 years and experienced all the things experienced in this post. Looking for Purim recipes on Pinterest during lockdown in 2020 brought me to Tori Avey and her recipe. Then I tried the fold method she shows and haven’t had another blow out. Perfect every time. I made 72 this year,some for gifts. Dough recipe is butter one. Poppyseed,raspberry,apricot, prune,cherry fillings. Many compliments from recipients of little gifts. I will never go back to traditional pinching!
