I've baked Hamantaschen many times over 5 decades, usually with the fun of children's helping hands filling and shaping these Purim treats. I have never had to freeze the dough before baking, nor have I ever added breadcrumbs to the filling. Be sure not to overfill, that's the key. Give a light pinch to the corners with a drop or so of water, space them well on the baking sheet. We cut the leftover dough with appropriate holiday cookie cutters or form the initials of the children baking.
We fill with apricot or raspberry preserves, my favorite is poppy seed filling, lekvar, and even chocolate chips, careful , not too many. Most will be fine, occasionally a cookie wall will collapse...eat those with the children immediately, they are a reward. Enjoy, be happy.
