This is about PJ Hamel's recipe for Easy Everyday Sourdough Bread. I have made this a number of times and love the flavor but not happy with my very crunchy crust, so hard I can hardly cut it with my bread knife. The other day I was following another sour dough baker that advertised a soft crust and saw that she had olive oil in the recipe. Today I decided to try that too with your recipe. I added 1-2 Tbsp of canola oil and what a difference in the crust, much softer and flavor is still great so this will be my go to recipe from now on. Thanks for a great recipe and method which is so simple to do. It even raised a lot more than it ever used to, not sure if that had anything to do with the oil or maybe my starter was more active.
