Love the 9x4x4 pan and love this recipe, so easy to make! Because I made it in Florida in August, I decreased the water as suggested, and I used unfed starter straight from the fridge. I did do the overnight rise in the bowl, after 10h it had almost tripled, thanks heat and humidity, lol. The bread still came out wonderful though, delicious and tangy. Next time I might either start it in the morning and watch the rise during the day, or if I'm doing it overnight again, I might use ice cold water to start. I was thrilled with the final result, a beautiful bread that tasted amazing.
