Hi Kylee, because of the extended rise times this recipe does tend to develop a more pronounced sour flavor. I'm not sure how well adding honey will modify this flavor, but I would suggest trying 2 tablespoons. I would also suggest substituting more Bread Flour for the whole grain flour in this recipe, as whole grains tend to contribute to more sourness in sourdough bread recipes.
