Hi Catherine, to maintain the crustiness of your sourdough bread when baked in a loaf pan, you'll want to keep the baking temperature the same, and add steam to the initial part of your bake. Baking time may be a bit different when you bake your loaves in pans, but look for the normal signs of doneness. Most likely baking time will be a bit longer, but check 5 minutes early, and reset the timer from there.
