Hi Turner,
Steaming the bread will make your crust more crisp, so probably not the best for a soft crust. Try reducing your oven temp, and you may also need to reduce your baking time.  You can also check out recipes that have some oil or other fat added, or milk/dairy, as that helps with a softer crust.
