Hi Lisa, doubling this recipe would be too much, but you could multiply the weight of each ingredient by 1.44, and that should fit nicely in your 13" X 4" X 4" pain de mie pan. To make the math a bit easier you could just do 1.5 times, but I'm worried this might be a bit too tight, especially if your starter is healthy and active! If you're looking for a softer crust you might also consider reducing the baking temperature to 375-400F. Baking time is likely to take a bit longer if you reduce the temperature. Remove the lid of your pain de mie pan for the last 10-15 minutes of baking time.
